Cucumbers and Onions; A Picnic Perfect Recipe

I LOVE food this time of year, there is so much incredible flavor and such local abundance, it makes meals so easy!

This week we ate our first Cherokee Purple tomato of the season. Oh. My. Goodness. These tomatoes are one of the best tasting tomatoes ever. Slice up them with just a little salt, WOW!

I also made good old-fashioned cucumbers and onions. These are the perfect picnic food, so if you are looking for ideas for your weekend picnic, make these super quick!

Cucumbers and Onions:

  • 2-3 cucumbers thinly sliced 

  • 1 small to medium onion thinly sliced 

  • 1/2 cup vinegar (any will do, but I prefer to use White Wine Vinegar)

  • 1/2 cup water 

  • Note: to adjust this recipe due to variations in cucumber sizes and containers used, mix equal parts vinegar and water as needed to fully cover the cucumbers.

  • 1-2 Tablespoons of Honey, Maple Syrup or other sweetener (more or less to taste)

  • A Pinch of Salt and Pepper   

  • 1 clove of minced garlic (optional)

Combined everything in a bowl or jar and allow them to marinate for a few hours upto two days. Refrigerate.
